Valrhona pralinés are the result of a blend of sugar and nuts made according to our own traditional methods of enhancing the subtle flavors of Roman hazelnuts and almonds from Valencia, both of which are selected and tested just as rigorously as the cocoa beans we source.
Cocoa beans and nuts are roasted separately at specific temperatures and then mixed before being ground and conched together.
Valencian almonds are blanched, skinned and then cooked in sugar syrup. The resulting mixture is then ground to the specifications of each product.
